The character from Banana Boat, who works through the night loading fruit cargo on tropical docks, waiting to get home and drink his rum.

What cocktail trends do you see occurring in Denver? 
So many nuanced personalities have developed in bars across Denver. Everyone is kind of doing their own thing, from elegant martini services on silver trays to rowdy piano and karaoke sing alongs. Cocktails are meant to be enjoyed and enjoyment is one thing Denver does very well.

Tally Me Banana

In shaker, combine:

•  1-1/2 ounces Ron Zacapa 23 Year
•  3/4 ounce Tanqueray 10
•  1 ounce banana-pear purée
•  3/4 ounce lime juice
•  1/2 ounce Orgeat
•  4 dashes of mixed bitters

Shake and double strain into a tiki mug. Top with club soda and garnish with a banana leaf, dehydrated orange wheels, and cinnamon. Serve in a scorpion bowl with cedar wood, dry ice, and floral arrangements. Water and essential oils are poured on top of the dry ice, creating an aromatic cloud that transports the drinker to a tropical escape.
